Bread is my enemy.
Whenever I go to a restaurant and see that they have free bread, it's so hard not to fill up before sitting down to eat.
As you know, we are big fans of the Longhorn Steakhouse here. So I'm sure it's no surprise that we love their bread.
It's tender, it tastes so good and when you combine it with their butter. We created this delicious copycat recipe—and it's amazing!
Ingredients:
- 1 1/3 cup whole wheat flour
- 1 cup wheat flour
- 1/2 teaspoon of sugar
- 1 teaspoon of salt
- 2.5 teaspoons dry yeast
- 1 tablespoon of butter
- 3/4 cup buttermilk, warm
- 1/3 cup of honey
- 1/4 cup mixed grains (I use Bob's Red Mill 10 grain cereal)

Instructions:
- Mix 3/4 cup all-purpose flour, 3/4 cup all-purpose flour, sugar, salt, and yeast in a bowl.
- Combine butter and honey.
- Gradually add the buttermilk to the dry ingredients and beat with a hand mixer for about two minutes.
- Add remaining flour until your dough is no longer sticky.
- Mash the mixed grains.
- Knead for about 10 minutes until elastic and smooth.
- Let the dough rise in a warm place for about 60-90 minutes.
- Divide the dough in half and roll each half into a 7" x 5" rectangle.
- Starting from the wide side, roll up tightly and pinch the seam.
- Let the dough rise until it doubles in size.
- Preheat oven to 375 degrees.
- Make 3-4 slits in the top of each bun.
- Bake for 25-35 minutes.
- Remove the bread and brush each loaf with a mixture of egg whites and water.
- Put back in the oven and bake for about 10-15 minutes.

Where can I find the beans you use in this recipe?
I just ordered Bob's Red Mill 10 Grain Cereal from Amazon. I've seen it in the supermarket too. You can really use any multigrain blend you like!
Why is the rise time so short?
When I originally wrote this recipe, it had a fairly short rising time. We also put it in the refrigerator. However, after receiving many responses and messages from other people, we realized that we had to change the recipe.
It now has a much longer rise time which should give more consistent results. We also removed the cooling step. However, if you feel that the bread is rising too much, you can wrap it tightly and put it in the refrigerator before the second rise.
If the old recipe worked for you, here's what we did:
- Wrap the bread in plastic wrap
- Let rise for 20 minutes
- Refrigerate for 60 minutes
- Remove, let it come to room temperature
- Bake 25 minutes.

That was really brave - can I do something different?
Others who found this recipe too grainy found that reducing the grains and increasing the flour somewhat helped make it a less grainy bread.
Which mixer are you using?
I have bothKitchen Aid Artisan Mixer and Bosch Universal Plus🇧🇷 I love them both but theBoschit's my favorite way to make bread, especially when using whole wheat flour.
Can I freeze homemade bread?
Yup. Wrap in plastic wrap and aluminum foil and should last 3-4 months in the freezer.
